Dorothy's Specialty Seasonal Recipe

 

Ingredients:

2 kg mixed root vegetables, potatoes, carrots, parsnips, sweet potatoes all cut into even-sized pieces;
250g shallots;
4 tbsp olive oil;
Juice of a large orange;
2 tbsp poppy seeds.

  1. Toss vegetables in olive oil and roast at 200 degrees celcius until tender.
  2. Sprinkle over poppy seeds and orange juice and return to oven for 5 minutes.
  3. Serve.
